  The wine maker is David Fatches who has a long association with the Hunter and specifically quality wines made in traditional Hunter styles.

The wines have been made utilising cooled fermentation which extends the process and in slowing it all down preserves the natural fruit flavours and character into the wines.

David has undertaken the whole of the winemaking individually, from sampling in the vineyard prior to picking, to crushing, hand plunging and basket pressing the reds and all other processes through to the finishing. David therefore has total control and professionally orchestrates all the individual requirements without any deviation from our common objectives in making unique quality wines.

When you try the wines you will taste the quality of the fruit and the skill of David to take it from the vineyard to the wine you will enjoy.

David is making our wine as per the "old school" and the wines produced, particularly the Semillon and the Shiraz, are made the same way they were some 20 years ago when the Hunter Semillons and Shiraz really made their name.

David also travels to France to assist in the vintage at the same chateau winery each year. He works with the owner to input some of his skills into their process and product which must be beneficial to both parties as this has been continuing and developing over a number of years.
